Gluten-free Foodie Passion
Aileen Markey, founder of Unglu-d, is dedicated to expanding the options available to people who are confined to a gluten free diet due to coeliac disease or gluten intolerance. As a ‘foodie’, Aileen toils over her creations, not only to achieve the highest quality possible, but they must all taste great too!
Aileen Markey has firsthand experience of what it’s like to be faced with a sudden reduction in daily food options, having been diagnosed with coeliac disease in 2015.
“I was lucky as I started on a gluten free diet at a time there was quite a variety of products on the market however, I still felt we had a long way to go.”
According to Aileen, many of the gluten free products on the market were loaded with sugar and not necessarily focused on how to eat and stay healthy while living gluten free.
“There is a consistency of quality required, as well as ingredients which are versatile and can add flavour across many recipes”.
When developing products, Aileen applies her own best practice of eating quite naturally and healthily (and indulging only on an infrequent basis!).
What does a normal day look like for Aileen?
“First things first I walk my two dogs. Then I get to work managing customer orders and sending them out. I update social media and stay in touch with my audience and then I do some prep for weekend baking as I bake and sell gluten free products at some local markets.”
Vicinity stocks Unglu-d’s Gluten Free ‘Chilli Hot Sauce’, ‘Tomato Ketchup’ and ‘Seasoning Spice Blend’. We’re big fans of mixing the spice blend into a Chilli Sin Carne and the kids love it too!
And here are the gorgeous Jax and Mikey! “Jax is the shitsu, he’s 10 and have had him since he was a pup. Mikey is the jack Russell, I fostered him a year ago and couldn’t let him go!”
